Taj Mahal Chicken in Yogurt Sauce

From the story “Hostess with the Mostess” featured in the November issue

4 boneless, skinless chicken breast halves, cut into 1" pieces
4 - 6 cloves garlic crushed
1 teaspoon cayenne pepper
2 teaspoons garam masala*
1 teaspoon salt
1 1/2 cups plain yogurt

 

In a large skillet, lightly brown chicken pieces in a little vegetable oil heated with 2 tablespoons of butter. Add garlic and toss. Add remaining ingredients, mix well and simmer about 20 minutes.

 

* Garam masala is a very popular combination of Indian spices. It can be purchased at upscale grocery stores or at the West Side Market – or, you can make a batch of your own simplified version by mixing together:

1-1/2 teaspoons ground cloves

1 tablespoon cinnamon

2 tablespoons ground cumin

1 tablespoon ground coriander

2 tablespoons curry powder.
